You just add your liquid to the dry mix and create a dough. You shape the dough - into sausages, logs, patties - and wrap loosely but firmly in foil, making sure that there is some overlap and none of the dough is showing. You then place into a steamer and steam until the seitan has expanded and is firm. After cooling, you can finish off in a frying pan, on a barbecue or in the oven.
